Whether you choose to dine fireside in Carbon Beach Club’s newly renovated, Waldo Fernandez-designed dining room or on the deck under the stars, the sounds of the crashing Pacific will surely reach your ears as you settle in for a long, leisurely meal. The restaurant’s New Year’s Eve menu will focus on locally sourced ingredients from the region’s finest purveyors, including One Gun Ranch.
Start your meal with one of CBC bar director Josh Curtis’ special winter cocktails, then move to a glass or bottle selected from the extensive wine list, recognized by Wine Spectator with its Award of Excellence for the sixth year in a row (after all, your journey to bed just includes a short walk down the hallway). Then the food will start to appear. California coastal cuisine gets a celebratory upgrade for the holiday, all carefully prepared by CBC executive chef Ryan Caldwell and his team. “The ingredients do all the work, not me,” Caldwell said in a recent interview.
Expect a menu heavy on fresh produce, with land and sea options prepared with a Mediterranean spin. Dessert will surely include indulgent treats designed to pair perfectly with a glass of Champagne. This is New Year’s Eve, after all.
